Yes I was wondering the same. Some kind of edible root? I know it's Not garlic.
Also, I was amazed to see the height of the large white flowers (?) that towered over the bike in that one photo. Holy smoker's, they be Huge!! What are those plants/bushes/trees? I can imagine how big each one of those white flowers are standing up close!

I'll never get my wheels on your turf so thanks for sharing your beautiful scenery with us. What a Great ride!!

They are not critters, Sir. I think it is bok-alike veg but not bok. People use those root for pickle.

The white flowers I guess are the peach flower I mentioned as a regret because there is a vast fields of peach flowers nearby I did not get time to see them.
You can imagine the scale the magnitute of white, purple peach flowers streching beyond horizon as far as your eyes can see.

The good thing is, I can see it next year.

Nice to see a PCX with some good honest dirt on it from riding in the countryside.

The yellow flowers look like oilseed rape, we get fields of them here and when the wind blows towards our house from their direction the strong scent trigger's my wife's migraines.
