It's very easy. I use Google maps with my iphone in a waterproof inner pocket, and run the headphones up inside my jacket and then in one ear. Works perfectly.
Having said that, you're better off not using a GPS, and getting lost for a few hours. That's how you get to know your way around.

It's marketed at us in the UK who are limited to a 125cc bike without a full license which is a pain to get.

Spare Honda plastic isn't cheap here in the UK. Honda dealers aren't very welcoming here either.

I'm looking at doing the A1 license on my PCX. It would mean I can ride the PCX without L plates and take passengers. When you say full test, do you mean A1 light motorcycle license or the full Direct Access? I'm considering doing the A1 test, but if you do it on an automatic then you can only ride automatic. So it would mean doing another test later down the line if I want a bigger bike.
