Yes I was wondering the same. Some kind of edible root? I know it's Not garlic.
Also, I was amazed to see the height of the large white flowers (?) that towered over the bike in that one photo. Holy smoker's, they be Huge!! What are those plants/bushes/trees? I can imagine how big each one of those white flowers are standing up close! o_O

I'll never get my wheels on your turf so thanks for sharing your beautiful scenery with us. What a Great ride!! 8)

Bok choy (Chinese cabbage):

Staple in Chinese cooking, this cruciferous vegetable has vitamins C, A, and K, and is an excellent source of calcium, magnesium, potassium, manganese, and iron.
A single cup of bok choy contains the entire RDA of beta carotene, which has been shown to prevent night blindness and possibly reduce the risk of cataract and macular degeneration, makes it highly recommended by the Macular Degeneration Association.

Closest thing I could find, sounds like an awesome diet for some of us fat ass Americans

I eat bok choy and that isn't it unless it's overgrown to the point of taking over the neighborhood...and that is the root :)

Ya think?? Hmm, I'm doubting that, but I know no better. Soooo,

Please Come back oh great photographer and put our questionable minds to rest. What are those white hanging bundles? (Why do they remind me of Alien new born critters? Do ya see it?)

And don't forget about those huge white flowers towering over moto-man, what be they?

They are not critters, Sir. I think it is bok-alike veg but not bok. People use those root for pickle.

The white flowers I guess are the peach flower I mentioned as a regret because there is a vast fields of peach flowers nearby I did not get time to see them.
You can imagine the scale the magnitute of white, purple peach flowers streching beyond horizon as far as your eyes can see.

The good thing is, I can see it next year.

More amazing pictures.
Nice to see a PCX with some good honest dirt on it from riding in the countryside.

The yellow flowers look like oilseed rape, we get fields of them here and when the wind blows towards our house from their direction the strong scent trigger's my wife's migraines.
