My last service was at 7,500 and I've decided with my limited technical knowledge to maintain the bike myself from now on,
So what sort of things should I be doing and when approx should I be doing them?

Following the service schedule in the owners manual is probably the best bet - albeit with valve check's done far less frequently than suggested.

Oil Every 2500 miles is important, BUT, if you can afford to do it every 1500 miles do it... oil is the one thing that you can't change too much, its basically what keeps your engine running, and with less than a ltr of oil in the engine, the more you change it, there better for you engine.

little things like belts and rollers wear at all different rates depending how to bike is used, and regular checks for wear will give you a good idea of when things should be changed.

Stick with the recommended 2500 miles, the more you change, the more likely you are to strip the thread on the drain plug. This is easy to do, engine metal is soft.

Oil change interval on the PCX is actually 5000 miles.

Or you can use a pump. Takes 2 mins

Either way, you want to make changing your oil often a habit. Like I said you can not change your oil too much! It's cheap and takes 10 minutes.

Check your air filter often. Especially if you live in a dusty environment.

Utterly pointless throwing away perfectly good oil.
Stick to the specified interval.
Same applies to the airfilter.
Dont waste time checking it, just change it at the specified mileage.

+1, but check the air filter if you live in a desert or very dusty area.
