I just did some research, and it appears that the 2019 is different than the pre-2018 and post 2021 models. So strange. So, if I had to guess, with the 2019 for whatever reason, Honda went with short gearing, but Tall Variator, and on older models like mine, they went with tall gears and shorter Var...

I have my bike tuned for hard acceleration. I like it to scream off the line to beat traffic hence the super light weights. My MPG is down into 75mpg range bc of that but I'm content with that. What size rollers did you install (Gram specific). Did you gain ANY more top end at all? What was your top end before, bone stock? I have that same exact setup on mine. Personally, I think those plastics on the bars looks hideous. Then again I think the stock bars on all PCX are ugly (hence me changing out my bars to Z-bars.
I would suggest just removing the plastic covers and exposing the bars to use a traditional Bar Mount. Or you can notch the plastics.

I feel the stock rear shocks are the softest shocks out there. Most aftermarket would be stiffer, I could be wrong.
I run some Takegawa lowering rear shocks. They are stiff but I run them bc they are shorter than stock which is what I wanted since I lowered the front.

Spray everything down with some WD40. Spring, bounce it, spray, bounce it. Should be easy to isolate the issue. Then once you find the issue, you can just wash off the WD40 from where its not needed and then use the Silicone spray.

If a shop ordered the wrong tires once, I would never use them again. I always buy my tires online myself sized to match what's on the bike. Partzilla is my go-to for everything scooter related.
I know the newer PCX has a 14 front 13 rear. Unlike the 14 front/rear like older model PCX's.

You have the same issue I had way back in the days with my 2017. From what I learned, 2017 and some 2018 have cross over parts from the parts bin. By changing the weights you can get the engine to rev to max power rpm (8300?) which will increase top speed on a 125 to 122kph or about 75 mph. Your weight may vary. Larger drive face as you say will also help unless it raises the gearing to a point where the engine cannot rev to max. Thats incorr...
