This morning , when riding, the keyless symbol started flashing on/off on/off, the symbol resembling the wifi logo.
It did not stop untill I got off, switched off, in this instance the PCX started beeping on/off, The beeping was stopped only by using the key.
What is the cause of that? Anyone konws?

Change the battery in the fob and re-pair with the bike.

I also wonder. However I notice when I make a stop, open the seat and walk away. I get like 10 or so beeps. Not sure what this means.

If the key loses connection with the bike during a ride (could be deep in a side pocket of your jacket, for example) then the symbol will start to flash. Similarly, if the engine is running and you walk away from the bike it will start beeping. There are probably other variations built into the system but these are the ones that I've come across on the Forza.
